A Couple Of My Newest Creations |
Lately there has been one thing blowing up my Instagram: Food. It is almost like you don't even dare cruising through your Instagram feed around dinner time unless you have already eaten - it can get pretty dangerous. I've seen some super tasty things lately: from stir fry to sushi to cake and mini meatloaves (okay, that one was a picture of my own, but I had to throw it in there). I have only mustered up the courage to ask one person to share their recipe...I mean, I don't want to offend them if it is some secret family recipe. Can you imagine how awkward that would be? So I wanted to take some time to share all of my recipes with you all - not even really the recipes, just a few of the things I have made lately. I have been in quite a cooking mood lately, and I think it shows!
Crepes. Hubby has been literally obsessing over crepes since back in the day when we first started dating (yes, it's really been that long). I'm not a huge pastry person...although I'm a bit hesitant to categorize crepes as a "pastry". They really take on whatever category you want them to - they can be crafted into a delicate desert or rolled into a main course all based upon the ingredients you choose to roll up inside. Hubs insisted on powdered sugar and honey. I really had no interest in trying them - they already had two strikes in my book: Pastry and honey. Honey is a total no go for this chick. Somehow, Hubby craftily conned me into trying one of the delicate pancakes and (can I get a drum roll please???) I really didn't care for them. They have an odd texture and not very much flavor. Just not a desirable combo. But I am proud to say that I conquered the crepes and am now able to make them for Hubs whenever his little heart desires!

Hubby and I were watching the Duggars with 30 kids and counting, or however many they have now, and we happened to see an episode where they took a trip to a prezel place and made their own pretzels. I turned to Hub, who was looking at me, and I knew he was thinking the same thing. We wanted pretzels.
The next day we took a trip to Publix to get everything and made our way home. Hubs was still a bit drugged up from getting his wisdom teeth pulled:

So I figured my safest bet would be to just tackle these things on my own. Making the dough was easy - I let it rise, made dinner in the meantime, and returned after an hour to find that it had doubled in size just as it was supposed to. Sweet. Now I could get on with making the savory pretzels. Wrong. For whatever reason, the recipe I was following for required you to boil the pretzel dough (after you had already crafted it into the pretzel shape) in baking soda. Ew? Needless to say, I made a fricking mess. I was tempted to just say screw it with the pretzels and toss the dough into the sizzling pot of soda water. By the time I had finally gotten the pretzel shaped, I had to carefully get it both in and out of the pot of water. By that time, the pretzels looked more like blobs of dough. I went from 0 to frustrated faster than you can say "The Duggars 45 kids and counting". A few of them turned out alright (taste wise), but they were just too bleh from the baking soda. Like you could taste the baking soda, which by all means is not a very appetizing taste. Will I ever try making these again? Maybe. Definitely not this recipe though. Ick.
Lastly was my fried/baked parmesan chicken.
It started off as baked parmesan chicken, but after I realized that it wasn't getting crispy, I had to intervene. Who likes soggy breaded chicken? Please raise your hands nice and high so I can be sure to hit you on the head with my spatula and force feed you my awesome chicken! I promise you will never go back! Anyways, after letting my chicken strips bake for a while and realizing that they hadn't yet gotten crispy enough, I decided to fry them for a minute or two. Best decision of my life. Okay, maybe not that great of a decision, but it was still a pretty grand idea. Completely made this meal. Hubs had one of his friends from work over and they polished off all of the strips I made. We are talking 5 chicken breast halves. That's a lot of fried/baked chicken, especially for Hub's friend being a shrimpy little guy! (Okay, so I made him have seconds...)
